Hi. I have GMKTec K8 Plus (Ryzen 7 8845HS) Mini PC. I got Samsung DDR5 2x8 GB 5600MHz SO-DIMM modules and Samsung DDR5 2x16 GB 6400MHz CSO-DIMM (Clocked) modules. 8+8 GB modules and 8+16 GB modules together work. With 8 GB module 16 GB module decreases speed to 5600MHz. But, 16+16 GB don’t. I want to buy new Mini PC. For example: HX 370 or 470.
Do they work with these clocked modules?

Make sure you have updated Bios / Uefi, it can improve ram compatibility
I agree with checking to make sure your motherboard BIOS is running the latest version. Other than contacting the maker of your GMKTec K8 Plus mini PC, I think the only way to know if the combinations of RAM modules will work is if you actually try them. I would expect that mixing an 8 GB RAM module with a 16 GB RAM module would create problems for the memory controller, even when you decrease the RAM speed (but you said it works).
